   Mono-unsaturated fat is the most desirable type of fat found in the diet as it helps to decrease the level of LDL's (bad) cholesterol and helps to increase the level of HDL's (good) cholesterol

   Olive oil is thought to have a protective effect against certain cancers. (This could be related to oleic acid, which is the predominant mono-unsaturated fatty acid in olive oil)
